Bean Soup

Bean Soup – ΦΑΣΟΛΑΔΑ

Wash the beans, and soak them in the pot with 9 cups of water for 10-12 hours or overnight. When ready, remove and discard any floating beans (optional),and then just add all ingredients in the pot.
~3hrs, covered, low heat

  • 1 lb lima Beans or giant beans
  • 9 cups Water
  • 100ml Olive Oil
  • 1tbsp Tomato paste
  • 1 stalk Celery – diced (include leaves)
  • Parsley – chopped
  • 2 Carrots – diced
  • 3 large Garlic cloves – diced
  • 1 large Red Onion – diced
  • 1 can 16oz diced Tomatoes – Stir in blender only 1 second
  • Salt
  • Pepper
